Chicken in creamy pecorino cheese sauce with sautéed cherry tomatoes and mashed potatoes
Delicious chicken in creamy pecorino cheese sauce accompanied by sautéed cherry tomatoes and a smooth mashed potato. A quick family recipe that combines the juiciness of the chicken breast with the intense flavor of pecorino and the freshness of the tomatoes.

Ingredients
- 2 unit chicken breast
- 20 g pecorino cheese
- 4 g chicken broth cube
- 400 g potato, peeled and cut into 2 cm cubes
- 200 ml heavy cream
- 125 g cherry tomato, halved
- 1 clove garlic, finely chopped
- 1 teaspoon oregano
- 1 tablespoon butter
- 15 ml olive oil
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Peel the potatoes, cut them into 2 cm cubes, cover them with water in a pot, add salt, and bring to a boil. Cook over medium heat for 15-18 minutes until tender.
- Heat a drizzle of olive oil in a pan over medium heat. Season the chicken breasts with salt and pepper and cook for 3-4 minutes per side until golden and cooked through. Remove and set aside.
- In the same pan, add a drizzle of olive oil and the chopped garlic. Cook for 1-2 minutes over medium heat until the garlic is golden, add the cherry tomatoes, and sauté for 2-3 minutes, stirring. Season with salt and pepper to taste.
- In a medium bowl, mix the heavy cream, pecorino cheese, and chicken broth cube. Season with salt and pepper and whisk until smooth.
- Drain the potatoes and return them to the pot. Add a drizzle of olive oil and, if desired, the butter. Season with salt and pepper and mash with a potato ricer or fork until you have a puree.
- Pour the sauce into the pan with the cherry tomatoes and cook for 3-4 minutes over medium heat until it thickens. Add the chicken, cook for another 1-2 minutes coated in the sauce, and adjust salt and pepper if needed.
- Serve the mashed potatoes on one side of the plate, the chicken breast on the other, and top it with the creamy sauce and sautéed tomatoes. Sprinkle with oregano to taste.
