Rigatoni with homemade pumpkin sauce with goat cheese and toasted pumpkin seeds

This rigatoni recipe combines a smooth, creamy roasted pumpkin sauce with cream cheese and crumbled goat cheese, topped with toasted pumpkin seeds. It's a comforting vegetarian dish that's easy to prepare in just 30 minutes.

Ingredients

  • 180 g rigatoni
  • 300 g violin squash, diced
  • 0.5 unit onion, thinly sliced
  • 40 g cream cheese
  • 70 g goat cheese
  • 10 g pumpkin seed
  • 1 clove garlic, finely chopped
  • 100 ml water
  • 25 ml cooking water
  • 1 drizzle olive oil
  • salt
  • pepper

Instructions

  1. In a large pot, cover with plenty of water and add a pinch of salt. Cover and bring to a boil.
  2. When it boils, add the rigatoni and cook for 10–12 minutes until al dente. Reserve 25 ml of the cooking water, drain the pasta, and leave it in the same pot.
  3. Meanwhile, in a skillet over medium-high heat without oil, toast the pumpkin seeds for 1–2 minutes until they begin to brown. Remove them, sprinkle with a little salt, and set aside.
  4. In the same skillet, add a drizzle of oil and sauté the garlic for 1–2 minutes. Add the onion, season with salt and pepper, and cook for 4–5 minutes until translucent.
  5. Add the diced squash and sauté for another 3–4 minutes over medium-high heat, stirring occasionally.
  6. Pour in the 100 ml of water and the reserved cooking water, bring to a boil, cover, and cook over medium-low heat for 10–15 minutes until the squash is tender.
  7. Season with salt and pepper and, using an immersion blender, blend everything until you have a creamy sauce. Add the cream cheese and blend briefly to combine.
  8. Add the pumpkin sauce to the pot with the rigatoni and mix well. Taste and adjust salt and pepper.
  9. Crumble the goat cheese log into medium pieces and sprinkle it over the pasta. Finish with the toasted pumpkin seeds.
  10. Serve immediately and enjoy your meal!
