Marinated chicken with apple and parsley accompanied by couscous with citrus vinaigrette

Delicious chicken marinated with apple and parsley accompanied by fluffy couscous and citrus vinaigrette. Quick and full of flavor, it combines the sweetness of the apple and the fresh touch of lemon with aromatic spices for a fresh and satisfying dish.

Ingredients

  • 250 grams chicken breast, chopped
  • 150 grams couscous
  • 1 unit lemon, zested and juiced
  • 4 g vegetable broth powder, powder
  • 3 g smoked paprika, powder
  • 2 g ground cumin, powder
  • 4 g ground coriander, powder
  • 1 unit apple, peeled and diced
  • 5 g parsley, chopped
  • 150 ml water
  • 1 teaspoon oregano, powder
  • 30 ml olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.75 g oregano
  • 0.35 g dried basil
  • 0.35 g dried thyme
  • 0.13 g dried rosemary
  • 0.3 g garlic powder

Instructions

  1. Peel the apple, halve it, remove the core and cut into 1-2 cm cubes. Zest half a lemon and set aside. Cut the remaining half of the lemon in half.
  2. In a large bowl, combine the apple, chopped chicken, smoked paprika, ground coriander, cumin, oregano and the juice of half a lemon. Season with salt and pepper and mix well. Cover with plastic wrap and refrigerate.
  3. Bring the water to a boil with a pinch of salt. In a bowl, place the couscous, add the Italian herbs and a drizzle of oil. Pour in the hot water, stir, cover with plastic wrap or a plate and let stand for 5 minutes. Fluff with a fork.
  4. In a small bowl, mix the lemon juice and zest to taste, half of the chopped parsley and a generous drizzle of oil. Season with salt and pepper and whisk to emulsify.
  5. Heat a drizzle of oil in a frying pan over medium heat. When hot, add the chicken, apple and all of the marinade. Cook for 6-8 minutes, stirring frequently, until the chicken is golden and cooked through. Adjust salt and pepper to taste.
  6. Add the lemon and parsley vinaigrette to the bowl of couscous. Serve the couscous on plates, place the chicken with apple on the side and sprinkle with the remaining parsley.
