  • Prep: 5 min
  • Cook: 20 min

Ingredients

  • 180 g orzo
  • 1 unit shallot, chopped
  • 1 clove garlic, minced
  • 400 ml water
  • 100 g snow pea, halved
  • 20 g grated Parmesan cheese
  • 20 g cream cheese
  • 1 tablespoon butter
  • 1 teaspoon flour
  • 150 ml milk
  • 100 g bacon
  • 20 ml olive oil
  • salt
  • ground black pepper

Instructions

  1. Peel and chop the shallot and garlic. In a saucepan, heat a drizzle of oil over low heat. Add the shallot and garlic and cook for 2 minutes until golden. Stir in the orzo and cook for 1 minute over medium heat. Add the water and cook for 10-15 minutes, stirring, until the orzo is tender. Season with salt and pepper.
  2. Trim the ends from the snow peas and cut them in half. In a skillet, heat a drizzle of oil over medium-high heat. Add the snow peas, season with salt and pepper, and sauté for 3-4 minutes until golden. Remove and set aside. Add a little more oil and sauté the bacon for 3-5 minutes until crispy. Set aside.
  3. Make the cheese sauce: In the skillet, heat the butter over medium-low heat until melted. Add the flour and cook for 1 minute, stirring. Stir in the grated Italian cheese, cream cheese, and milk, and cook for 1-2 minutes over low heat, stirring, until thickened and smooth. Season with salt and pepper to taste.
  4. When the orzo is cooked, add the cheese sauce to the saucepan and mix well. Taste and adjust salt and pepper. Plate the sauced orzo on the bottom of a dish, top with the sautéed snow peas, and garnish with the crispy bacon.
