Teriyaki chicken with stir-fried vegetables, basmati rice and sesame seeds
Delicious combination of juicy pieces of chicken thigh stir-fried in a flavorful teriyaki sauce, accompanied by crunchy vegetables and fluffy basmati rice. The addition of toasted sesame seeds adds extra texture and flavor.

Ingredients
- 150 grams basmati rice
- 250 grams chopped chicken thigh
- 8 grams white sesame seed
- 0.5 unit onion, cut into thin strips
- 75 g teriyaki sauce
- 1 unit green bell pepper, cut into 0.5 cm strips
- 1 unit bell pepper, cut into 0.5 cm strips
- 1 g chili flake
- 1 clove garlic, minced
- 320 ml water
- 50 ml water
- 15 ml olive oil
- salt
- black pepper
Instructions
- Cook the rice: In a covered pot, bring the water for the rice to a boil, add the rice and a pinch of salt, cover and cook for 11-13 minutes over medium-low heat, stirring occasionally. Once cooked, fluff with a fork and set aside.
- Prepare the vegetables: Peel and cut the onion into thin strips and the bell peppers into 0.5 cm strips after removing the seeds. Toast half of the sesame seeds in a pan over medium heat for 2-3 minutes, stirring occasionally. Remove and set aside.
- Cook the chicken: Mince the garlic and sauté it in the pan with a drizzle of olive oil for 1-2 minutes over medium heat until fragrant. Add the chopped chicken thighs, season with salt and pepper, and cook for 3-4 minutes until browned.
- Stir-fry the vegetables: Add the onion and peppers to the chicken with a pinch of salt, and cook for 4-5 minutes until the vegetables soften and the chicken is cooked through.
- Add the sauce: Stir in the teriyaki sauce and the water for the sauce, and cook for 3-4 minutes until thickened. Add the remaining sesame seeds, taste and adjust salt and pepper to your liking.
- Serve the rice on plates and top with the teriyaki chicken and vegetables. Sprinkle the remaining toasted sesame seeds and chili flakes to taste.
