Gnocchi with bacon vinaigrette and cherry tomatoes in thyme cheese sauce
A quick and easy dish that combines soft gnocchi with sautéed cherry tomatoes, a creamy thyme cheese sauce, and a crispy bacon vinaigrette. Perfect for enjoying with family in just 25 minutes.

Ingredients
- 380 g gnocchi
- 125 g cherry tomato, halved
- 12 ml balsamic vinegar
- 100 g bacon slice
- 40 g cream cheese
- 1 g dried thyme
- 50 ml cooking water
- 0.5 tablespoon butter
- 1 teaspoon sugar
- olive oil
- pinch salt
- pinch black pepper
Instructions
- Cut the cherry tomatoes in half. In a frying pan, heat a drizzle of olive oil over medium-high heat. Add the cherry tomatoes, one-third of the dried thyme, salt, and pepper, and sauté for 4-5 minutes, stirring frequently, until they start to brown. Remove and set aside.
- Fill a saucepan with plenty of water, add a pinch of salt, and bring to a boil. In another frying pan, heat a drizzle of olive oil over medium-high heat and sauté the bacon for 3-4 minutes, until golden. Remove, drain excess fat, and set aside in a bowl.
- When the water in the saucepan boils, add the gnocchi and cook for 2 minutes. Reserve the specified quantity of the cooking water and drain the rest. In the bowl with the bacon, add the balsamic vinegar, a drizzle of olive oil, and half of the dried thyme. Stir to coat the bacon well.
- In the pan, heat a drizzle of olive oil or the butter over medium heat along with the remaining thyme. Add the gnocchi and sauté for 2-3 minutes, stirring. Stir in the cream cheese, cherry tomatoes, reserved cooking water, and sugar. Cook for another 2-3 minutes. Plate the gnocchi with the thyme cheese sauce and top with the bacon vinaigrette.
