Cod with Tomato and Potatoes with Sweet Paprika

This dish combines the tenderness of fried cod with a rich homemade tomato sauce and thin potatoes sprinkled with sweet paprika. It’s a balanced, easy-to-prepare, and very flavorful recipe.

Ingredients

  • 250 g cod
  • 0.5 unit onion
  • 400 g potato
  • 4 g chive
  • 400 g fried tomato sauce
  • 4 g smoked paprika
  • 2 tablespoons flour
  • 0.5 teaspoon oregano
  • 1 clove garlic
  • 0.5 teaspoon sugar

Instructions

  1. Cut the potatoes into thin 0.5 cm slices. In a pot, add the potatoes, cover them with water, and add a pinch of salt. Bring to a boil and cook for 15-18 minutes or until tender. When ready, drain the potatoes using a colander and set aside.
  2. Place the flour in a deep plate. Season the cod with salt and pepper and sprinkle the oregano over it, pressing lightly so it adheres. Then, coat the cod pieces in flour.
  3. Heat a drizzle of oil in a non-stick pan over medium heat. Add the cod and cook for 2 minutes on each side, until golden and cooked through. Set aside off the heat. In the meantime, peel and mince the garlic. Peel the onion, divide it in half, and chop one half into small dice.
  4. In the same pan, add a drizzle of oil with the garlic. Heat over medium heat and cook for 1-2 minutes until golden. Add the onion and a pinch of salt, cooking for 4-5 minutes until translucent. Add the fried tomato sauce and sugar and cook for 3-4 more minutes with the pan covered until the sauce thickens. Season with salt and pepper to taste.
  5. Add the cod to the pan with the sauce and cook for 3 more minutes, covering the cod with the sauce. Taste and adjust seasoning as needed. Meanwhile, mix the smoked paprika with a drizzle of oil in a small bowl. Chop half of the chives.
  6. Serve the potatoes at the bottom of the plate and pour over the paprika oil. Place the cod with tomato on top and sprinkle with chives to taste.
