- Servings: 2
- Prep: 5 min
- Cook: 30 min
Ingredients
- 150 grams basmati rice
- 0.5 unit onion
- 250 grams mushroom
- 250 grams liquid cream
- 250 grams ground beef
- 4 g beef stock powder
- 320 ml water
- 20 grams flour
- 2 tablespoons flour
- 1 teaspoon oregano
- 15 ml olive oil
- salt
- pepper
Instructions
- Fill a saucepan with the water, add the rice and salt to taste, and bring to a boil with the lid on. Once boiling, reduce to medium-low heat and cook for 11-13 minutes, stirring occasionally. Once cooked, fluff the rice with a fork to separate the grains and keep covered in the saucepan.
- In a bowl, mix the ground beef, flour for the meatballs, and season with salt and pepper. Form 5 meatballs per person. On a plate, add the flour and coat the meatballs so they are well covered.
- In a frying pan, heat a generous drizzle of oil over medium heat. Add the meatballs and cook for 5-6 minutes, stirring occasionally, until they are golden and cooked through. Remove from the pan and discard excess fat.
- Clean the mushrooms with a damp cloth and trim the stem ends. Slice them thinly. Peel the onion and cut into thin strips. In the same pan, heat a drizzle of oil over medium heat, add the onion and mushrooms, and cook for 5-6 minutes, stirring frequently, until they soften. Season with salt and pepper and set aside one third in a bowl, leaving the rest in the pan.
- In the pan with the remaining vegetables, add the liquid cream and beef stock powder and bring to a boil. Cook over medium heat for 2-3 minutes, seasoning with salt and pepper. Transfer the vegetables and sauce to a measuring jug and blend with an immersion blender until smooth. Return the sauce to the pan, add the meatballs, and cook everything together for another 2-3 minutes.
- Serve the basmati rice on one side of the plate and the meatballs in mushroom sauce on the other. Place the reserved mushrooms and onions over the meatballs and sprinkle the oregano on top.
