Gnocchi in basil sauce with chicken with honey and thyme dressing
This dish combines soft gnocchi in a creamy basil sauce with pieces of chicken breast caramelized in honey and thyme. It's a quick, family-friendly recipe, ideal for a sophisticated meal in only 20 minutes.

Ingredients
- 250 g chicken breast, chopped
- 250 g gnocchi
- 5 g basil, chopped leaves
- 15 g honey
- 1 g dried thyme
- 60 gr cream cheese
- 50 ml water
- 120 ml gnocchi cooking water
- olive oil
- salt
- black pepper
Instructions
- Fill a saucepan with plenty of water, add a pinch of salt, and bring to a boil. When it boils, add the gnocchi and cook for 2 minutes until they float. Reserve 120 ml of the cooking water, drain and set aside the gnocchi.
- In a pan, add 50 ml of water and the cream cheese. Bring to a boil, stirring, and cook for 1–2 minutes until the sauce thickens. Meanwhile, remove leaves and chop almost all of the basil.
- Pour the sauce into a measuring jug and add almost all of the chopped basil, reserving a little for plating.
- In the same pan (clean if necessary), heat a drizzle of olive oil over medium heat. Add the chicken, season with salt and pepper, and cook for 5–6 minutes until golden and fully cooked.
- Add the sauce water, honey, and thyme to the chicken. Sauté for 1–2 minutes, stirring, until the sauce thickens and the chicken caramelizes.
- Using an immersion blender, puree the reserved sauce with the remaining basil until smooth. Pour the sauce over the gnocchi in the saucepan and mix well. Taste and adjust salt and pepper.
- Serve the gnocchi in basil sauce on plates and top with the honey and thyme chicken. Finish with the reserved basil leaves.
