Crispy BBQ Chicken with Baked Potatoes, Apple Salad and Aioli

Delicious combination of crispy breaded chicken with a touch of BBQ spices, accompanied by juicy baked potatoes and a fresh apple salad. Homemade aioli adds creaminess and enhances all the flavors. A balanced and easy recipe to enjoy with the family.

Ingredients

  • 2 unit chicken breast
  • 400 g potato
  • 4 g BBQ seasoning
  • 1 unit apple
  • 15 g aioli
  • 50 g panko
  • 1 unit carrot
  • 110 g lettuce heart
  • 12 ml balsamic vinegar
  • 15 g mustard
  • 1 clove garlic, chopped
  • 1 unit egg, beaten
  • 150 ml vegetable oil

Instructions

  1. Preheat the oven to 200 °C. Cut the potatoes in half lengthwise and then into 1-2 cm thick wedges. Peel and chop the garlic.
  2. In a medium bowl, toss the potatoes with a drizzle of oil, 1/4 of the BBQ seasoning, the garlic, salt and pepper. Place the potatoes on a baking sheet lined with parchment paper and bake for 20-25 min (stir halfway through).
  3. Peel and grate the carrot. Cut the apple in half, remove the core and slice each half into thin slices. Pat the chicken breasts dry and cut them into 3 strips per person. Wash hands and utensils after handling raw meat.
  4. In a deep plate, beat the egg. In another plate, mix the panko with the remaining BBQ seasoning. Season the chicken strips with salt and pepper, dip them in the beaten egg and then in the panko, pressing to adhere.
  5. Heat the oil for frying in a pan over medium-high heat. Fry the chicken for 3-4 min per side, until golden and cooked through. Remove and drain on paper towels.
  6. In a salad bowl, mix the mustard, balsamic vinegar and a drizzle of oil to make the vinaigrette. Add the lettuce, grated carrot and sliced apple. Season with salt and pepper and toss.
  7. Serve the crispy chicken with the baked potatoes, accompany it with the salad and place the aioli in a bowl beside the plate.
