Chinese-Style Almond Chicken with Basmati Rice

This dish combines tender pieces of chicken breast stir-fried with crunchy almonds and vegetables, all coated in a delicious soy sauce and served over fluffy basmati rice. It's an easy and quick recipe, perfect for a low-calorie family meal.

Ingredients

  • 250 grams chicken breast, chopped
  • 15 grams almond, sliced
  • 150 grams basmati rice
  • 0.5 unit zucchini
  • 250 grams mushroom
  • 20 ml soy sauce
  • 4 g chicken broth powder
  • 320 ml water
  • 75 ml water
  • 1 teaspoon flour
  • olive oil
  • salt
  • pepper

Instructions

  1. Fill a saucepan with the water for the rice, add the rice and salt to taste, and bring to a boil with the lid on. Once boiling, reduce to medium-low heat and cook for 11-13 minutes, stirring occasionally. Once cooked, fluff the rice with a fork to separate the grains and keep it in the covered saucepan.
  2. Heat a skillet over medium heat without oil. Add the almonds and toast for 1-2 minutes, stirring. Remove and set aside. In the same skillet, add a drizzle of olive oil over medium heat; when hot, add the chicken, season with salt and pepper, and cook for 5-6 minutes, until golden and fully cooked inside. Remove and set aside.
  3. Clean the mushrooms with a damp cloth and remove the stem ends. Cut them into quarters. Halve the zucchini, trim the ends, and slice into 0.5-1 cm half-moons.
  4. In the skillet, heat a drizzle of olive oil over medium-high heat. When hot, add the zucchini and mushrooms and cook for 4-5 minutes. Reduce to medium heat and continue for 2 more minutes, until the vegetables are tender and golden.
  5. In a bowl, mix the soy sauce, chicken broth powder, flour, and water for the sauce. When the vegetables are ready, add to the skillet the chicken, the sauce, and the toasted almonds (reserving some for garnish). Mix well and cook for 1-2 minutes over medium-high heat.
  6. Serve the basmati rice at the base of the plates and top with the Chinese-style almond chicken. Sprinkle the remaining toasted almonds over the dish.
