Hoisin-Glazed Chicken Thigh with Oven-Baked Potatoes and Sweet Chili Mayonnaise
Delicious boneless chicken thighs glazed with hoisin sauce, served with crispy oven-baked potato wedges and a creamy mayonnaise blended with sweet chili sauce. A balanced, flavorful dish with an oriental twist.

Ingredients
- 280 grams boneless skinless chicken thigh
- 30 g hoisin sauce
- 45 g mayonnaise
- 15 g sweet chili sauce
- 400 grams potato
- 8 grams white sesame seed
- 10 g chive, chopped
Instructions
- Preheat the oven to 220 °C. Cut the potatoes in half lengthwise, place them flat side down, and slice them into 1–2 cm thick wedges. Finely chop half of the chive.
- Place the potatoes on a baking tray lined with parchment paper, drizzle with oil, and season with salt and pepper. Toss to coat and bake on the top rack for 25–30 minutes, turning halfway through cooking.
- Heat a pan over medium heat without oil. Add half of the sesame seeds and toast for 2–3 minutes, stirring. Remove and set aside. Add a drizzle of oil, heat over medium-high heat, add the seasoned chicken, and cook for 4 minutes per side until cooked through.
- Reduce the heat to low and spread the hoisin sauce on one side of the chicken. Flip and cook for 1 minute on each side with the sauce. Repeat so the chicken is glazed on both sides.
- In a bowl, mix the mayonnaise with the sweet chili sauce and half of the chopped chive.
- To serve: place the oven-baked potatoes on one side and the hoisin-glazed chicken thighs on the other. Serve with the sweet chili mayonnaise and sprinkle with the toasted sesame seeds and remaining chive to taste.
