Simple Healthy No-Bake Energy Bites
These no-bake energy bites come together in about 10 minutes using pantry staples like rolled oats, nut butter, honey (or maple syrup), and your favorite mix-ins. They’re portable, customizable, and keep well in the fridge or freezer for an easy grab-and-go snack or breakfast.

Ingredients
- 1.25 cup rolled oats
- 2 tablespoons assorted seed mix
- 0.5 cup peanut butter
- 0.333333 cup maple syrup
- 1 teaspoon vanilla extract
- 0.25 teaspoon kosher salt
- 0.5 cup chocolate chip
Instructions
- In a large bowl, combine the rolled oats, power mix-ins, nut butter, sweetener, vanilla extract, salt, and your choice of mix-ins. Stir until the mixture forms a cohesive, slightly sticky dough. If it feels too wet, add a bit more oats; if too dry, stir in a little more nut butter.
- Cover the bowl and chill in the refrigerator for 30 minutes so the dough firms up and is easier to handle.
- Once the mixture is set, use a small scoop or tablespoon to portion out about 1-inch rounds. Roll each portion between your palms to form a smooth ball.
- Enjoy immediately, or transfer the energy bites to an airtight container. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
