These no-bake energy bites come together in about 10 minutes using pantry staples like rolled oats, nut butter, honey (or maple syrup), and your favorite mix-ins. They’re portable, customizable, and keep well in the fridge or freezer for an easy grab-and-go snack or breakfast.

Ingredients

  • 1.25 cup rolled oats
  • 2 tablespoons assorted seed mix
  • 0.5 cup peanut butter
  • 0.333333 cup maple syrup
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon kosher salt
  • 0.5 cup chocolate chip

Instructions

  1. In a large bowl, combine the rolled oats, power mix-ins, nut butter, sweetener, vanilla extract, salt, and your choice of mix-ins. Stir until the mixture forms a cohesive, slightly sticky dough. If it feels too wet, add a bit more oats; if too dry, stir in a little more nut butter.
  2. Cover the bowl and chill in the refrigerator for 30 minutes so the dough firms up and is easier to handle.
  3. Once the mixture is set, use a small scoop or tablespoon to portion out about 1-inch rounds. Roll each portion between your palms to form a smooth ball.
  4. Enjoy immediately, or transfer the energy bites to an airtight container. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
