Gnocchi with Italian-style chicken in roasted cherry tomato sauce
A comforting dish of golden gnocchi served with Italian-seasoned chicken breast and a creamy roasted cherry tomato sauce. The contrast between the smooth sauce, the tender texture of the chicken, and the aromatic hints of Italian spices makes it irresistible.

Ingredients
- 250 g gnocchi
- 2 unit chicken breast
- 125 g cherry tomato
- 125 g liquid cream
- 1 teaspoon sugar
- 0.75 g oregano
- 0.35 g dried basil
- 0.35 g dried thyme
- 0.13 g dried rosemary
- 0.3 g garlic powder
Instructions
- Preheat the oven to 200 °C. Place the cherry tomatoes on a baking tray lined with parchment paper along with half of the Italian seasoning and a drizzle of olive oil. Toss well and roast on the middle rack for 15 min.
- Heat a drizzle of oil in a frying pan over medium heat. Add the gnocchi and sauté for 4–5 min, stirring occasionally, until golden. Remove and set aside.
- In the same pan, heat another drizzle of oil over medium heat. When hot, add the chicken breasts, season with salt and pepper and cook for 3–4 min on each side, until golden and cooked through. Remove from heat and sprinkle the remaining Italian seasoning over them.
- When the cherry tomatoes are ready, transfer them to a measuring jug. Add half of the liquid cream and blend with an immersion blender until smooth.
- Pour the sauce into the pan and heat over medium heat. Add the sugar and cook for 1 min. Add the gnocchi and cook for 1 more min, stirring to coat. Season with salt and pepper to taste.
- Slice the chicken breasts into 1 cm thick strips. Serve the gnocchi with the roasted cherry tomato sauce at the bottom of the plate and place the seasoned chicken strips on top.
