Crispy Chicken and Goat Cheese Tostadas

Delicious crispy tostadas with juicy chicken, caramelized onion and a touch of sweetness from quince paste, fresh tomato, and creamy goat cheese. A quick and easy dish perfect as an appetizer or light meal.

Ingredients

  • 250 g chicken breast
  • 6 wheat tortilla
  • 30 g quince paste
  • 1 onion
  • 75 g goat cheese log
  • 1 tomato
  • 1 teaspoon sugar
  • 150 ml frying oil
  • 30 ml olive oil
  • salt
  • pepper

Instructions

  1. Peel the onion and cut it into thin strips. In a pan, heat a drizzle of olive oil over medium-high heat. Add the onion and salt and cook for 2–3 minutes. Add the sugar and cook for 5–6 more minutes over medium-low heat, stirring frequently. Remove from the pan.
  2. In the same pan, heat a drizzle of olive oil over medium heat. Add the chicken, season with salt and pepper, and cook for 3–4 minutes per side, until fully cooked. Dice the tomato into small cubes and place in a bowl. Dress with a drizzle of olive oil, salt, and pepper.
  3. In another pan, heat the frying oil over medium heat. Pierce the wheat tortillas on both sides with a knife to prevent them from puffing up when frying. When the oil is hot, immerse the tortillas for 30 seconds per side or until golden. Remove and set aside on paper towels.
  4. Crumble the goat cheese and cut the chicken into 1 cm strips. Top each tostada with quince paste, chicken, caramelized onion, goat cheese, and tomato.
