Thai-style lasagna with minced meat

A light and tasty version of Italian lasagna inspired by Thai cuisine, where the pasta sheets are replaced by zucchini slices and the sauce is enriched with coconut milk and Thai spices. Ideal for those looking for a different, fresh and flavorful dish.

Ingredients

  • 1 unit carrot, grated
  • 1 unit onion, chopped
  • 1 unit zucchini, sliced and diced
  • 250 grams minced beef and pork
  • 180 ml coconut milk
  • 60 grams grated cheese
  • 1 clove garlic, chopped
  • 0.9 g ground coriander
  • 0.52 g ground cumin
  • 0.21 g chili flake
  • 0.45 g garlic powder
  • 0.29 g black pepper

Instructions

  1. Preheat the oven to 220 °C with the grill option. Peel and chop the garlic. Grate the carrot. Peel the onion and cut into small dice. Trim the ends of the zucchini and cut half into 0.5-1 cm slices and the other half into cubes of the same thickness.
  2. In a pan, heat a splash of oil over medium heat. Add the zucchini slices, season with salt and pepper, and cook for 2 minutes per side until golden.
  3. In another pan, heat a splash of oil over medium-high heat. Add the onion, grated carrot, diced zucchini; sauté for 4-5 minutes until they start to soften.
  4. Season the minced meat with salt and pepper and add it to the pan with the vegetables. Cook for 3-4 minutes, breaking it up with a spatula, until browned. Stir in the coconut milk and the Thai spice mix; cook for 5-6 minutes more, stirring, until the sauce reduces.
  5. Drizzle some oil on the bottom of a baking dish. Place a layer of zucchini slices and cover with a layer of the vegetable and meat mixture. Repeat until all ingredients are used.
  6. Cover the lasagna with the grated cheese and bake on the middle rack for 8-10 minutes or until the cheese is golden.
  7. Remove the lasagna from the oven and serve portions onto plates.
