Polynesian Chicken with Spinach Purée
A recipe combining honey- and thyme-glazed chicken breast, creamy potato and spinach purée, and sautéed pepper strips. Perfect for bringing Polynesian flavors to your table in an easy and fun way.

Ingredients
- 400 grams potato
- 1 unit shallot
- 100 grams spinach leaf
- 1 unit bell pepper
- 2 units chicken breast
- 0.5 g dried thyme
- 15 g honey
- 1 tablespoon butter
- 30 milliliters olive oil
- 1 grams salt
- 0.5 grams pepper
Instructions
- Peel the potatoes and cut them into 2 cm cubes. Place them in a pot, cover with water, add a pinch of salt, and bring to a boil. Reduce to medium heat and cook for 15–18 minutes or until tender. Meanwhile, peel and chop the shallot.
- In a skillet, heat a drizzle of oil and the butter over medium heat. Add the shallot and cook for 2–3 minutes, stirring. Add the spinach leaves and cook for another 2–3 minutes, until they have reduced by half. Season with salt and pepper to taste.
- Cut the pepper in half, remove the seeds, and slice into thin strips. When the spinach is ready, transfer it to a measuring jug and blend with an immersion blender until smooth. Pour a drizzle of oil into the skillet, add the pepper with salt, and cook for 4–5 minutes, stirring, until tender.
- Drain the potatoes and pour them into the measuring jug along with the spinach sauce. Add a drizzle of oil, the butter, salt and pepper to taste. Blend with the immersion blender until you achieve a creamy purée, and adjust salt and pepper if necessary.
- In the same skillet, heat a drizzle of oil over medium heat. Add the chicken, season with salt and pepper, and cook for 3–4 minutes on each side, until golden and cooked through. Remove from heat, sprinkle with half of the dried thyme, and add the honey. Stir to glaze the chicken evenly.
- Arrange the glazed chicken and sautéed pepper on one side of the plate; on the other side, add the potato and spinach purée.
