Beef in creamy onion sauce with salad and potato and carrot purée

Juicy beef steaks accompanied by a creamy onion sauce, a smooth potato and carrot purée, and a fresh arugula salad. A balanced, family-friendly dish ready in just 30 minutes.

Ingredients

  • 200 grams potato, peeled and diced
  • 1 unit carrot, peeled and sliced
  • 1 unit onion, julienned
  • 200 ml milk
  • 250 grams beef steak, salted and peppered
  • 50 grams arugula
  • 1 teaspoon sugar
  • 1 tablespoon vinegar
  • olive oil
  • salt
  • pepper
  • butter

Instructions

  1. Peel the potatoes and cut them into 2 cm cubes. Peel the carrot, cut it in half lengthwise, and make 1-2 cm half-moons. In a pot, add the potatoes and carrot, cover them with water, and add a pinch of salt. Bring to a boil and cook over medium heat for 15-18 minutes or until tender.
  2. Peel and cut the onion into thin strips. In a pan, heat a drizzle of oil over medium-high heat, add the onion and salt, and cook for 2-3 minutes. Add the sugar and cook over medium-low heat for another 4-5 minutes, stirring.
  3. In the same pan with the onion, add 3/4 of the milk and bring to a boil. Cook for 2 minutes or until the sauce reduces. Place the sauce and butter to taste in a measuring jug and blend with an immersion blender until smooth.
  4. When the potato and carrot are done, drain them and return them to the pot. Add the remaining milk, a drizzle of oil, salt, and pepper. Using a potato ricer or fork, mash until you achieve a purée.
  5. In a clean pan, heat a drizzle of oil over medium-high heat. Add the beef, season with salt and pepper, and cook for 1 minute per side or until cooked through. Remove and set aside.
  6. In a salad bowl, mix the vinegar, a drizzle of oil, salt, and pepper. Add the arugula and toss. Serve the potato and carrot purée, the salad, and the beef on separate plates. Top the meat with the onion sauce.
