Caesar Salad with Fried Gnocchi
This Caesar salad combines crunchy fried gnocchi with a creamy sauce made of mayonnaise, Greek yogurt and mustard, sautéed cherry tomatoes and lettuce hearts, all topped with grated Italian cheese. It's a fresh dish, full of flavor and ready in just 15 minutes.

Ingredients
- 20 g mayonnaise
- 125 g Greek yogurt
- 15 ml mustard
- 40 grams Parmesan cheese
- 1 clove garlic, chopped
- 2 tablespoons red wine vinegar
- 250 grams gnocchi
- 125 grams cherry tomato, halved
- 220 grams lettuce heart, thinly sliced
- 5 g chive, chopped
- 1 tablespoon butter
Instructions
- Peel and chop the garlic. In a measuring jug, add the garlic, mayonnaise, Greek yogurt, mustard, half of the grated cheese and the red wine vinegar, a drizzle of oil, salt and pepper. Blend with an immersion blender until you get a smooth sauce.
- In a frying pan, heat a drizzle of oil and the butter over medium heat. Add the gnocchi and cook for 4-5 minutes, stirring, until golden. Remove the gnocchi and set aside. Cut the cherry tomatoes in half.
- In the same pan, add a drizzle of oil and the remaining garlic. Heat over medium heat and cook for 1 minute. Add the cherry tomatoes and cook for 2-3 minutes. Season with salt and pepper to taste. Cut the lettuce hearts into thin strips and chop half of the chives.
- In a salad bowl, mix the lettuce, gnocchi, cherry tomatoes, almost all of the chopped chives and the sauce. Season with salt and pepper to taste. Serve the salad on plates and sprinkle with the remaining Italian cheese and chives as desired.
