Fried Rice with Marinated Pork
A flavorful fried rice with strips of pork loin marinated in soy sauce, sugar, and garlic, accompanied by tender leek, egg omelet strips, and crunchy salted peanuts. It’s a quick, versatile dish where you can adjust the spiciness to your taste.

Ingredients
- 250 g pork loin, in 1–2 cm strips
- 20 g salted peanut
- 20 ml soy sauce
- 150 g basmati rice
- 0.5 unit red chili pepper, sliced
- 1 unit leek, thinly sliced into half-moons
- 320 ml water
- 1 clove garlic, grated
- 1 teaspoon sugar
- 2 unit egg, beaten
Instructions
- Fill a saucepan with water, add the rice and salt to taste, and bring to a boil with the lid on. Once it boils, reduce to medium-low heat and cook for 11–13 minutes, stirring occasionally. Remove, fluff the rice with a fork, and keep covered.
- Peel and grate the garlic. Slice half of the red chili and cut the pork loin into 1–2 cm strips. In a bowl, mix the pork, garlic, chili, half of the soy sauce, sugar, and a drizzle of oil. Let marinate for 10–15 minutes.
- Trim the roots and dark green part of the leek and slice it in half lengthwise. Then, cut into thin half-moon slices. In a large pan, heat a drizzle of oil over medium heat and cook the leek for 5–6 minutes, until softened.
- While the leek cooks, beat the egg with a pinch of salt. In a non-stick pan, heat a drizzle of oil over medium heat. Pour in the beaten egg and spread it across the surface. Cook for 1–2 minutes, until set. Remove and, once cool, cut the omelet into thin strips.
- In the same non-stick pan, heat a drizzle of oil over medium-high heat. Add the marinated pork, season with salt and pepper, and cook for 2–3 minutes, until browned. Add the leek, remaining soy sauce, and cooked rice. Stir-fry for another minute, then add the egg strips and mix.
- Place the peanuts in a bag and crush them with the base of a saucepan. Serve the rice with pork and egg strips on plates, and sprinkle the peanuts to taste.
