Greek Tomato and Cucumber Salad
This salad combines fresh flavors of tomato, cucumber, and pickled onion with crunchy croutons and a creamy Greek cheese dressing. It's quick and perfect for a light and flavorful lunch.

Ingredients
- 100 grams Greek cheese
- 1 unit cucumber, peeled and cut into longitudinal ribbons
- 2 ciabatta bread, cut into 1-2 cm cubes and toasted
- 0.5 unit onion, thinly sliced
- 1 unit tomato, cut into wedges
- 125 grams cherry tomato, halved
- 1 packet balsamic vinegar
- 3 teaspoons red wine vinegar
- 1 teaspoon pickling salt
- 2 teaspoons oregano
- 3 tablespoons olive oil
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Toast the ciabatta bread in a toaster until lightly golden. Cut into 1-2 cm cubes and dress with a drizzle of oil and a pinch of salt.
- Peel the onion and place the thin slices in a small bowl. Add the red wine vinegar and pickling salt, mix, and set aside.
- In another bowl, combine the tomato wedges, halved cherry tomatoes, balsamic vinegar, oregano, and a drizzle of oil. Season with salt and pepper to taste and mix well.
- Using a peeler, cut longitudinal ribbons of cucumber and set aside. Scoop out the interior of the cucumber and place it in a blender jar. Add the Greek cheese, a drizzle of oil, and pepper. Blend with an immersion blender until smooth.
- In a salad bowl, combine the cucumber ribbons, croutons, and dressed vegetables. Drain the pickled onion and add it along with a drizzle of oil. Season with salt and pepper and mix to combine. Serve in deep plates and accompany with the Greek cheese dressing as desired.
