  • Servings: 2
  • Cook: 35 min

Ingredients

  • 250 g pork loin, cut into 2-3 cm pieces
  • 0.5 unit ginger, grated
  • 150 g basmati rice
  • 1 unit carrot, peeled and cut into 0.5-1 cm half-moons
  • 1 unit bell pepper, cut into 0.5 cm strips
  • 20 ml soy sauce
  • 1 unit spring garlic, thinly sliced (white part)
  • 8 g white sesame seed
  • 1 clove garlic, grated
  • 320 ml water
  • 50 ml water
  • 2 teaspoon sugar

Instructions

  1. Peel the carrot and cut it in half lengthwise. Slice into 0.5-1 cm half-moons. Halve the bell pepper, remove the seeds, and cut into 0.5 cm strips. Thinly slice the white part of the spring garlic. Peel and grate the garlic and ginger (use half of the ginger).
  2. In a large skillet, add a drizzle of oil with the grated garlic and ginger. Heat over medium heat and cook 1-2 minutes until golden. Add the carrot, the white part of the spring garlic, and the bell pepper, and cook 8-10 minutes, stirring occasionally, until the vegetables are tender. Season with salt and pepper to taste, then remove and set aside.
  3. Meanwhile, rinse the rice under running water to remove excess starch and drain. In a saucepan, add the water for the rice, the rice, and salt to taste. Bring to a boil, cover, and cook over medium-low heat for 11-13 minutes, stirring occasionally. Once done, fluff the rice with a fork and keep covered.
  4. Cut the pork loin into 2-3 cm pieces. In the same skillet, heat a drizzle of oil over medium-high heat. Add the pork, season with salt and pepper, and cook 1-2 minutes until browned. Remove and set aside.
  5. In that skillet, add the soy sauce, the water for the sauce, and the sugar. Cook over high heat for 2-3 minutes until thickened. Add the pork and stir to coat it with the sauce. Add the reserved vegetables and cook 2-3 minutes over medium-high heat until the sauce reduces and coats everything.
  6. Serve the rice on plates, top with the pork in sweet sauce and the vegetables. Sprinkle with the green part of the spring garlic and the sesame seeds. Adjust salt and pepper to taste.
