Teriyaki-style noodles with pork
This simple dish of Japanese noodles and teriyaki sauce can commonly be found on the streets and in homes of Japan. In this recipe, we take advantage of the versatility of this classic Japanese dish and serve it with pork, mushrooms and sautéed pak choi.

Ingredients
- 100 g udon noodle
- 110 g pak choi
- 1 unit spring garlic, thin slices
- 75 g teriyaki sauce
- 250 g minced pork
- 250 g mushroom, thin slices
- 1 clove garlic, peeled and chopped
- 50 ml water
- olive oil
- salt
- pepper
Instructions
- Prepare the vegetables: Remove the pak choi stem and cut into 2 cm pieces; peel and chop the garlic; slice the spring garlic into thin rounds; clean the mushrooms, halve them and slice thinly.
- Cook the meat: in a frying pan, add a drizzle of oil and the chopped garlic; heat over medium heat and cook for 1-2 min; add the pork, season with salt and pepper and cook for 4-5 min, breaking it up with a spatula until browned; remove and set aside.
- Cook the noodles: in a pot, add the water and salt, bring to a boil; when boiling, add half of the noodles, stir and cook for 1-2 min; drain; in the frying pan, heat a drizzle of oil and cook the white part of the spring garlic for 1-2 min; add the mushrooms and sauté for 3-4 min until they begin to brown.
- In the frying pan, add the pak choi and cook over medium heat for 2-3 min until softened; add the teriyaki sauce and water and cook for 2 min; add the noodles and pork, stir and cook for 1-2 min, season with salt and pepper; serve and garnish with the green part of the spring garlic.
