Thyme chicken with homemade romesco sauce

Ingredients

  • 150 grams basmati rice
  • 1 unit bell pepper, cut into 2 cm squares
  • 1 unit tomato, cut into quarters
  • 1 unit onion, cut into 2 cm strips
  • 10 grams hazelnut
  • 1 unit chicken breast
  • 1 unit zucchini, cut into 0.5-1 cm half-moons
  • 1 g dried thyme
  • 1 clove garlic, peeled
  • 320 ml water
  • 2 teaspoons red wine vinegar
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 220°C. Peel the onion, cut it in half and then into 2 cm strips. Trim the ends of the zucchini, slice lengthwise and then into 0.5–1 cm half-moons. Cut the bell pepper into 2 cm squares, the tomato into quarters and peel the garlic.
  2. Place the bell pepper, tomato and garlic on one half of a baking tray lined with parchment paper. Drizzle with a little olive oil, season with salt and pepper and toss. On the other half, arrange the zucchini, onion and chicken breast. Season with thyme, a drizzle of oil, salt and pepper. Bake on the middle rack for 20 minutes, stirring halfway through.
  3. Meanwhile, put the water with salt in a saucepan and bring to a boil. Add the rice, cover and cook over medium-low heat for 11–13 minutes, stirring occasionally. Once done, uncover to separate the grains and set aside.
  4. For the romesco sauce: in a blender jar, combine the roasted tomato, pepper and garlic with the hazelnuts, red wine vinegar, oil for the sauce, salt and pepper. Blend until you get a smooth, homogeneous sauce.
  5. Add the roasted zucchini and onion to the saucepan with the rice and mix well. Season with salt and pepper to taste.
  6. To serve: place the rice with roasted vegetables on one side of the plate and arrange the sliced chicken breast with thyme romesco sauce alongside.
