Beef in almond sauce with caramelized onion and rice

A quick and family-friendly dish that combines juicy beef steaks with a creamy almond sauce, accompanied by fluffy basmati rice and caramelized onion. Perfect for a delicious dinner in just 25 minutes.

Ingredients

  • 250 g beef fillet
  • 150 g basmati rice
  • 15 g sliced almond
  • 4 g beef stock
  • 200 ml heavy cream
  • 1 unit onion
  • 1 teaspoon sugar
  • 320 ml water
  • splash olive oil
  • salt
  • pepper

Instructions

  1. Cook the rice: Fill a saucepan with the water, add the rice and salt and bring to a boil with the pan covered. Once it boils, reduce to medium-low heat and cook for 11–13 minutes, stirring occasionally. Once cooked, fluff the rice to separate the grains and keep it covered in the pan.
  2. Cook the beef: Heat a frying pan over medium heat without oil. Add the almonds and cook 1–2 minutes until golden. Remove and set aside. In the same pan, heat a splash of oil over medium-high heat. Add the beef, season with salt and pepper, and cook for 1 minute per side or until done. Remove and set aside.
  3. Caramelize the onion: Peel the onion, cut it in half, and slice into thin strips. In a pan, heat a splash of oil over medium-high heat. Once hot, add the onion and a pinch of salt and cook 2–3 minutes. Then add the sugar and cook over medium-low heat for 5–6 minutes more, stirring frequently. Reserve some of the onion outside the pan.
  4. Make the sauce: In the pan with the remaining onion, add the cream, beef stock, and almost all the toasted almonds (reserving some for garnish), and cook over medium-high heat for 1–2 minutes until the sauce reduces. Season with salt and pepper to taste.
  5. Blend the sauce: Transfer the sauce to a measuring jug and blend with an immersion blender until smooth and thick. Return the sauce to the pan and add the beef. Cook over medium heat for 1 minute, turning the meat to coat it with the sauce.
  6. Serve the rice on one side of the plates and place the beef in almond sauce on the other side. Top the beef with the toasted almonds and reserved caramelized onion.
