Orange roasted chicken drumsticks with vegetables and potatoes

Delicious roasted chicken drumsticks with vegetables and potatoes flavored with orange juice and Italian herbs. An easy and tasty dinner that combines the juiciness of the chicken with the sweetness of the fruit and the crunchy touch of the vegetables.

Ingredients

  • 4 unit chicken drumstick
  • 1 unit orange
  • 1 unit apple
  • 1 unit onion
  • 200 grams potato
  • 1 unit zucchini
  • 2 cloves garlic
  • olive oil
  • salt
  • pepper
  • 0.75 g oregano
  • 0.35 g dried basil
  • 0.35 g dried thyme
  • 0.13 g dried rosemary
  • 0.3 g garlic powder

Instructions

  1. Preheat the oven to 220°C. Peel and cut the onion into 2 cm strips, the apple into 2 cm cubes and the potatoes into 1–2 cm cubes.
  2. Remove the ends of the zucchini and cut it into 0.5–1 cm half-moons. Place all the vegetables on a baking tray lined with parchment paper, add the unpeeled garlic and squeeze the orange juice over the tray.
  3. Place the chicken drumsticks on top of the vegetables, sprinkle with Italian herbs, drizzle with olive oil, salt and pepper, mix everything and bake on the middle rack for 25–30 minutes, stirring halfway through until the vegetables and chicken are cooked.
  4. Serve the vegetables as a base on the plates and place the chicken on top. Mash the roasted garlic pulp left on the tray with the pan juices, mix and add the resulting sauce over the dish.
