Beef koftas with harissa
Juicy beef koftas flavored with harissa spices, served with fluffy couscous with red pepper and a fresh yogurt sauce. A complete dish, full of flavor and quick to make, perfect for a simple dinner with a spicy touch.

Ingredients
- 1 unit red bell pepper, cut into 0.5 cm dice
- 0.5 unit lemon, zest and juice
- 2 g mint, chop and reserve leaves
- 25 g panko breadcrumb
- 250 g ground beef
- 4 g chicken stock powder
- 150 g couscous
- 125 g Greek yogurt
- 2 cloves garlic, grated (half for the pepper, half for the mixture)
- 50 ml water
- 150 ml water
- 0.9 g smoked paprika
- 0.35 g ground cayenne pepper
- 0.41 g ground cumin
- 0.18 g ground coriander
- 0.16 g salt
Instructions
- In a pan, heat the water for the couscous with the chicken stock until it comes to a boil, stirring. Meanwhile, in a large bowl, mix the couscous with a drizzle of oil and season with salt and pepper to taste. When the stock boils, pour it into the bowl, cover and let rest for 5 minutes. Then, fluff the couscous to separate the grains.
- Cut the pepper in half, remove the seeds and cut into 0.5 cm dice. Peel and grate the garlic. In a pan, heat a drizzle of oil and half of the garlic over medium heat. Cook for 1-2 minutes or until golden. Add the pepper, season with salt and pepper, and cook for 5-6 minutes, stirring. Remove from heat.
- In a bowl, mix the ground beef with half of the harissa spice mix, the remaining garlic, the panko and the water for the koftas. Season with salt and pepper and mix well.
- Using your hands, form 4 meat balls per person, shape them into ovals and flatten slightly. In the same pan, heat a drizzle of oil over medium heat and cook the koftas for 2-3 minutes per side until browned and cooked through. Meanwhile, in another bowl, mix the Greek yogurt with the remaining harissa spice mix.
- Grate the rind of half a lemon and chop the mint, reserving leaves for garnish. When the couscous is ready, add the lemon zest, chopped mint, diced pepper, and a drizzle of oil. Season with salt and pepper and mix.
- Plate the couscous on one side of the dish and place the koftas on the other. Top the koftas with the yogurt sauce and garnish with the reserved mint leaves. Enjoy!
