Salad with crispy Serrano ham and cheese

A quick salad full of contrasts: crispy Italian cheese and Serrano ham, caramelized pear and a mustard-soy vinaigrette. Perfect for enjoying crunchy textures and sweet-and-sour flavors without hassle.

Ingredients

  • 80 grams Serrano ham, chopped
  • 125 grams cherry tomato, halved
  • 1 unit pear, diced into 1-2 cm pieces
  • 10 grams shelled walnut, chopped
  • 20 ml soy sauce
  • 15 ml mustard
  • olive oil
  • salt
  • pepper
  • 20 grams Parmesan cheese
  • 50 g arugula and lamb's lettuce mix
  • 1 teaspoon sugar
  • 2 teaspoons butter

Instructions

  1. Prepare the cheese crisp: heat a nonstick frying pan over medium heat without oil and distribute the grated Italian cheese in two small heaps, leaving space between them. Cook for 2 minutes, flip with a spatula and cook for another 2 minutes, until you have two pieces of toasted, crispy cheese. Remove from the pan.
  2. Caramelize the pear: cut the pear in half, remove the core and peel it if you like. Cut into 1–2 cm dice. In the same hot pan without oil, sauté the pear for 2–3 minutes, stirring occasionally. Add the sugar and butter and cook for another 2 minutes, until the pear is caramelized.
  3. Toast the ham: place the slices of Serrano ham on a flat plate with space between them and cook in the microwave at maximum power (900 W) for 2–3 minutes, until crispy. Let cool, then chop the crispy ham and the crispy Italian cheese. Halve the cherry tomatoes. Crush the walnuts in their bag using the bottom of a pan to chop them.
  4. In a salad bowl, whisk together the soy sauce, mustard, oil, salt and pepper. Add the cherry tomatoes, most of the caramelized pear and the arugula and lamb's lettuce mix. Toss well and divide among plates. Finish with the remaining caramelized pear, the cheese crisp and the crispy Serrano ham, and sprinkle with the walnuts.
