Bacon and Sautéed Pear Piadinas with Italian Pecorino Salad

Quick and delicious piadinas with bacon, pear, and sautéed onion, served with a fresh arugula and tomato salad dressed with pecorino and oregano. Perfect for a light and flavorful meal.

Ingredients

  • 1 onion, sliced into thin strips
  • 2 pear, cut into 1 cm cubes
  • 2 tomato, cut into small cubes
  • 200 g bacon
  • 40 g pecorino
  • 100 g arugula
  • 12 wheat tortilla
  • 2 tsp oregano
  • olive oil
  • salt
  • pepper

Instructions

  1. Peel the onion and slice it into thin strips. Cut the pear into 1 cm cubes. Cut the tomato into small cubes.
  2. In a skillet, heat a drizzle of oil over medium heat. Add the bacon and cook over high heat for 3-5 minutes until golden and crispy.
  3. Add the onion, pear, and salt, and cook for another 6-7 minutes, stirring, until the onion and pear are tender and golden.
  4. In a bowl, combine the pecorino cheese, a generous drizzle of oil, and the oregano. Season with salt and pepper to taste, then add the arugula and tomato. Mix well.
  5. Lay the wheat tortillas on a plate and heat them in the microwave on high power for 30 seconds.
  6. Fill each tortilla with the bacon, onion, and pear mixture, add salad to taste, and serve the remaining salad in a bowl.
