Ingredients

  • 908 g chicken breast, cubed
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • salt
  • black pepper
  • 1 tbsp olive oil spray
  • 0.5 cup non-fat Greek yogurt
  • 0.25 cup skim milk
  • 1 tbsp garlic, minced
  • 1 tbsp light cream cheese
  • 0.5 cup reduced-fat cheddar cheese, shredded
  • 0.5 cup reduced-fat mozzarella, shredded
  • fresh parsley, chopped
  • 4 wrap low-carb tortilla wrap
  • 0.5 cup non-fat Greek yogurt
  • 1 chipotle pepper in adobo
  • 1 tsp adobo sauce
  • 1 tsp ranch seasoning
  • lime juice

Instructions

  1. Slice the chicken breasts into bite-sized cubes.
  2. Toss the chicken with garlic powder, onion powder, smoked paprika, salt, and freshly cracked pepper until evenly coated.
  3. Air-fry the seasoned chicken at 390°F (200°C) for 10–15 minutes, until cooked through and lightly golden.
  4. While the chicken cooks, spray a skillet with olive oil and warm over medium heat.
  5. Add Greek yogurt, skim milk, cream cheese, minced garlic, shredded cheddar, shredded mozzarella, a pinch of salt, pepper, and chopped parsley to the pan. Stir constantly until the cheeses melt into a smooth sauce.
  6. Fold the air-fried chicken into the cheese sauce and stir to combine thoroughly.
  7. Portion the cheesy chicken mixture evenly among four tortillas. Sprinkle extra cheese on top and roll each into a burrito.
  8. Heat a clean skillet over medium-high. Place each burrito seam-side down and cook until the outside is golden brown and crisp, about 1–2 minutes per side.
  9. Meanwhile, whisk together the ranch ingredients—Greek yogurt, chipotle pepper, adobo sauce, ranch seasoning, and lime juice—until smooth.
  10. Serve the crispy burritos hot alongside the chipotle ranch.
